Inihaw na Pompano (Grilled Stuffed Pompano)

Inihaw na isda (grilled fish) with stuffing are commonly called as binakol na isda in Roxas City, Capiz in Philippines. But when I surfed the internet checking if somebody is having mentioned such a “binakol na isda”, I cannot find one. Anyway, this is the simple recipe of inihaw na isda using a pompano fish. Hope you like it.

  • 1 pc. large pompano fish
  • 1 pc. medium fresh lemon
  • 1/3 cup onions, sliced
  • 1 pc. medium tomato, chopped
  • 1 tbsp. ginger, sliced thin
  • salt and pepper
Cooking Directions:
  1. Clean pompano fish and slice open (butterfly style).
  2. Squeeze lemon inside and outside of the fish.
  3. Sprinkle salt and pepper all over.
  4. Stuff fish with onion, tomato and ginger.
  5. Wrap fish with aluminum foil securely so juice will not come out during grilling. Double the aluminum foil if necessary.
  6. Grill fish in oven or grill at 450 degrees Fahrenheit for 30 minutes at each side, a total of 1 hour.
  7. Open aluminum foil wrap and serve hot with toyomansi dip.
